Default Tomatoes - faulty measurements?

I made about a gallon of spaghetti sauce last night and I'd say it tasted very good. Just the right amount of pepper, for one thing.

The recipe called for 18 tomatoes. I only had cans of diced and crushed tomatoes.

Here's the weird part. When I googled, it said that there are two large or three medium tomatoes per pound, which certainly sounds right. But...when I asked how many tomatoes are in a 28-oz. CAN, it said...TEN tomatoes!

How can there be more than six?

As it happened, I only checked after emptying three such cans, since I wasn't sure whether to add a fourth. (I didn't.)

Another question. Since I don't have a pressure cooker - or much room in my freezer right now - I put it into glass mason jars, in the fridge. (Of course, one never puts a glass container into a freezer!) How long is it likely to last?

Btw, the recipe says to add the tomato paste slowly, AFTER all the other ingredients have come to a boil.

6 onions
3 green peppers
3/4 cup vegetable oil
18 tomatoes (skinned)
2 minced garlic cloves
1.5 Tbs. salt
2 Tbs. sugar
1 Tb. each oregano, basil, and thyme
6 bay leaves
30 oz. tomato paste

Contadina used to advertise "Eight Great Tomatoes in That Little Bitty Can"

They are talking about factory grown fruits and probably water somewhat
removed. Tomatoes vary from grape size to the big beefsteaks.

In Italy I spent time in the Pompeii region and they have acres of
tomatoes growing in tented fields. Veru colorful with the green leaves
and red fruits. They are an elongated types of tomato, not the balls in
most of our gardens.

Boy, that was weird...

Not only did I forget to list the ground pepper, I misread it last night as well!

The recipe SHOULD say a 3/4 teaspoon of pepper.

But I read "tablespoon."

I still think it tastes good. Even if it could use maybe a little more sugar, with all that pepper.

How big were those tomatoes when they came out of the can? How many were there?

This is why many prefer to cook by weight.

I'm still eating off a jar of spaghetti sauce that's been in the fridge since last June
or July.

I wouldn't. I'd stir it in after sauteing the vegetables, and keep stirring
as I added the tomatoes.

Lenona, next time buy one 28oz can of whole tomatoes. You can chop them
up yourself but count them first. You'll notice the canned tomatoes are
very small ones. Not much bigger than a golf ball. I can see how 10
might fit in a 28oz can.

First thing I noticed is that 30 ounces of tomato paste... that's
plenty to keep an Italian restaurant going for a weekend.
I use canned tomatoes for sauce all the time, usually half whole
skinned ones and half crushed. I have no reason to measure, I choose
a pot the size I like for how much sauce I want and keep adding until
it's full. I've tried using home grown Romas, wastes the tomatoes...
by the time the water is reduced all you'll have is caramelized brown
sludge and tastes nothing of tomato. Factories that reduce the liquid
from tomatoes use the same method used for frozen OJ. Much too
expensive for home use, they use a gigantic evaporation tower that
sucks off the warmed water vapor by vacuum. How do yoose think
Campbells makes their condensed soups. If your granny tells you hw
she made tomato paste by simmering tomatoes all day she was lying,
that's not possible, she bought canned.

Hate to say it, but my grandmother never cooked anything from scratch that called for more than two ingredients, IIRC. Even though she enjoyed fine restaurant food as much as anyone.

My grandfather, however, enjoyed making candy, blackberry jam, and custard sauce.

Not very polite. Since even WHOLE canned tomatoes are submerged in juice, it never occurred to me that they would REMOVE juice, just to add more tomatoes!

Obviously, tomato paste is a different matter entirely.

Not to mention that one always has to approach Internet information skeptically. One wouldn't say "it must be true; I heard it on the telephone," after all.

And there's no shortage of old cookbooks with errors in them, either.

I freeze my leftover sauce in ziplock bags . Take up very little room
and they will conform to odd shapes if necessary .

Whatever it takes to be effective against an oppressive government that
needs to be reined in. If they have rocket launchers, why should be

The "common military firearm" of that period was the same as "the
common hunting firearm" . In other words , there was parity between
common civilian firearms and military arms . Hell , some guys owned
their own cannons ! I believe we should also have parity of (at least
small) arms with our military . Oh , and I DO have powder and ball
firearms . As a last resort survival weapon , because I can manufacture
ammunition for it with common easy to find items . Oh , and don't
denigrate the old black powder arms , they were capable of astonishing
accuracy out to a thousand yards or more . If the rocket launcher can't
see you , he can't kill you .

Very true. That's what I do with pizza sauce. It comes in the big
commercial size cans. There's enough to make one pizza, then fill
up 9 or 10 ziplocks for the deep freeze.

Let's approach this another way. It doesn't matter how many tomatoes
are in a can.

Suppose the recipe calls for medium tomatoes (it didn't specify).
18 tomatoes would be 6 pounds. 6 pounds is 108 ounces.
108/28 is around 4.

Canned tomatoes typically contain added juice or puree, so 4 cans might
be too many (as you discovered).

Life is a story problem.

Depends on the can size, for sauce I buy cases of #10 cans, crushed so

I buy whole canned tomatoes by the case, with skins removed. Every
can contains different size tomatoes... most are a medium size with
smaller ones to fill in the spaces. I like to eat canned tomatoes
right from the can, much better than stupidmarket tomatoes. During
warm weather I eat vine ripened, I like Romas better than the larger
juicier salad tomatoes. For making sauce why concern oneself with the
number of tomatoes per can... I use crushed for sauce, no one can know
how many tomatoes were crushed. Canned tomatoes are sold by volume,
not by number of tomatoes. Still I put crushed tomatoes through my
Foley food mill to remove the seeds.
