Default Dinner tonight 12/3/2018

Pan seared petite filet minon
Mashed potato pancakes
Fresh green beans sauteed with garlic

Simple and delicious!

I've been dealing with internet modem issues all day, I really needed
something to be simple.

Snack plate of smoked sprats, salami, cream cheese, pimento cheese,
polish pickled veggies, Tassos double-stuffed, Castelvetrano, and
club crackers.

Tossed salad with sun dried tomatoes, dressed with balsamic and EVOO.

Leftover pot roast hash. I diced a leftover potato and browned it
in butter. I wish I'd had some onion, but didn't feel like bothering.
Once the potatoes were done, I mixed in the diced beef and just let
the residual heat take the chill off the meat.

I like salami and I like sprats but Salami and Sprats TOGETHER is
DOUBLE TIAD... that's like ham and lox on a bagel... no amount of
cream cheese can save it. The dwarf definately has its taste buds in
its anus.

==

Cheri posted a list of Spam recipes yesterday! D. chose for today, the
Spam with scalloped potatoes.

I thought it would be very bland, so I added some cheese to the white sauce.
I think I might need to add something with more flavour though, something
like the Asian sauce I cook, maybe? I will make it but let him add it when
he is eating it.

He is delighted with all those recipes I gave him the link and I
suspect he will be choosing more over the coming weeks))

Love it! D. is happy and that is what matters.

One of the sensible things if you live where hurricanes and other
natural disasters are a fact of life, it to have a ready stock of foods.

Spam is a suitable one with a very long shelf-life. I would not be
suprised if most who live in areas with a need to have an emergency
stock in the USA/Canada have Spam as one of the components. Tuna and
Spagettios are also really common.

I have a couple of cans of Spam in my emergency stock and also canned
corned beef. Various types of canned beans, canned tomato sauce. No
canned tuna but I do have canned crabmeat. No Spaghettio's, though.

So far I've never actually had to use any of those emergency supplies.
When the power went out for four days after Hurricane Matthew I cooked
on the grill - meats and frozen veggies that were slowly thawing in the
freezer. The Spam will last forever.

We have always kept a good store. We have a lot of canned stuff that I
would never normally use, but I realise I have to use some of it from time
to time

also made a corned beef hash yesterday so that is 2 cans used, oh he loves
that too LOL

He rarely asks for it because he enjoys what I cook but after seeing that
list ... it has set him off <g>

How would I have known? You never mentioned using Spam before and it
seems to me canned corned beef was something of a mystery. Mea culpa.

How would I have known? You never mentioned using Spam before and it
seems to me canned corned beef was something of a mystery. Mea culpa.

Noooo why would you have known?? )) They are not something I have ever
liked and would never eat them myself. But when someone else loves them ...
what should I do ...;p

Thats a good thing! Just let it slowly enter your regular foods.

I'm making a simple tomato based 'red sauce' right now. It is not what
I would call fancy but I suspect is close to what you and D would like.

It's not but 2 28oz cans of diced or sauced tomatoes, 7 cloves of
minced garlic and som italian blend seasoning. Because it will long
cook, the garlic works to a mild effect.

What will go under that sauce... I won't venture a guess because it
could be any of a thousand items from pasta to pork chops to seafood.
I'm getting ready to make up a few gallons of tomato sauce in my new
18 quart brasier, I'm running low in the freezer. Only difference is
I first fry up a family pack of inexpensive shoulder pork chops till
browned, then add the sauce stuff. After braising about an hour I
pick out the bones and freeze the sauce with whatever meat falls from
the bones... makes for a very rich pasta sauce... of course I skim off
the fat with a spoon, wintering birds get the fat, I just pour it on
the frozen ground so the birds can feast... the larger blue jays love
it along with dry cat food kibbles that they glom from the bowl on the
deck... jays are smart, they know when the ferals are out on a hunt.

And for all the UNeducated who think the veggie scraps I put out
attract skunks and coons are ignoranuses... I don't put any out until
after sunrise and pull in all the cat food at dusk... the wild
nocturnals don't come around during the day. And I don't care that a
field mouse grabs an errant kibble that the feral cats missed. Anyway
it's only the deer and bunnies that eat vegetarian, skunks, coons and
possums don't eat veggie parings. All creatures need to survive or
we won't.

Chances are it's basic red sauce to be served over spaghetti.

I'm sure other people make their tomato sauce with pork chops but I
never have. I make a simple red sauce using crushed or diced canned
tomatoes, crushed garlic, salt and a pinch of red pepper flakes.
