Corned beef and cabbage. New potatoes. No carrots.
It will be a wonderful dinner and yes, the corned beef was previously frozen. Vaccuum sealed. Also (lest anyone object) sold as "lower sodium". Seems like that's all I can find these days so there is no reason to soak out any excess salt. This afternoon I put the corned beef in the crock pot and added a little water. I added a couple of bay leaves. I don't add extra pickling spice other than from the packet because really, it's already "pickled". It's mostly white peppercorns and such. I'll be adding the quartered cabbage in the last hour of cooking. It sits on top of the meat and cooks both in the liquid and also via steam. Tender and delicious! The new potatoes will be cooked separately. My preference. It will be a tasty dinner with nice leftovers for future freezer meals. YUM! Jill |
