His television persona is not at all like his cooking at home videos.
Sorry you can't view them. You likely could if you did a search.

Some can, but you are right. Food TV went to shit before I stopped watching TV all together.

IN that video demo, Ramsey turns the steak a number of times. I was always told by people whose
meals I,have enjoyed, that a steak should be turned only once.

I've always done that, too (flip once only). but I didn't mention
it since I've heard of doing it both ways and there seems to be a
professional divide in that regard.

This article here from Serious Eats says that Ramsey is right on
that point. But he's wrong on three other things he did/said in
that video. Giving Ramsay a final score of a mere 25%. 3 Michelin
Stars, my ass!

Possibly BS on both. Have you eaten a steak from either Ramsey or the
Serious Eats author? Then unless you have, how do you know one is right
and the other wrong. There are many ways to get from point A to point B

Try a steak from both and get back to us. The truth is in the eating.

I'll toss in another methis just for giggles

I used to do that but these days, I've wised up. The problem with not turning the beef steak or pork chop is that you're overheating the side that's on the skillet and not allowing enough time for the heat to be properly distributed towards the center of the meat. This tends to result in a steak that's overdone on the outside and not cooked enough in the middle.

The proper way to fry a steak is to start out with high heat. Quickly brown one side and flip. Fry for a few seconds or so and turn the heat down and continue to fry at low heat. Turn the steak about every minute or so. The classic French method of frying a steak would be to brown the meat and then finishing it off in the oven. I've found that this is unnecessary. If you do this correctly, the steak will almost look like it's be cooked sous vide.

https://www.amazon.com/photos/share/...PG4Yrmho3ZpDWb

Frying a pork chop this way is even more important and allows you to get a perfectly fried, juicy, chop in a short time.

I have used 100+ techniques and recipes from Serious Eats and have
found their information 99% accurate. They test the theories
several ways and publish the science and results that back up their
assertions. Hundreds of thousands of others also have the same
opinion. There's even a SeriousEats reddit group where Kenji and
his friends often contribute (https://reddit.com/r/seriouseats/), as
well a newly opened and highly acclaimed restaurant (not a
pretentious fine dining restaurant), and a highly acclaimed
cookbook.

And on that 1% occasion I completely disagreed with their method
(boiling an egg), they came back a couple-few years later and said,
"You know what? We were totally wrong!" This is how you boil and
egg:

https://www.seriouseats.com/2014/05/...iled-eggs.html
(They used to have both old and new articles, but have purged the
previous false info)

OTOH, all you get with Ramsey is "This is how you do it and **** you
there is no other way" with no explanation, and much of which are
just brain farts of his. Especially the shit he spouts on his shows
jsut for "entertainment purposes".

Yes, Gordon Ramsey has a bunch of books. All of them cookie-cutter
books that are 95% written by somebody else - practically all
recipes, and Zero explanations and science. How many of his books do
you own and treasure? Does anybody here (except Graham) have a
Ramsay book they adore? Even Rachel Ray's books are better.

So I think I'll trust the tried and true Serious Eats. And Ramsay
can kiss my pearly white ass with his thin-skinned alcoholic lips
and his veneered rotten Scottish teeth.
