The problem with not turning the beef steak or pork chop is that you're overheating the side that's on the skillet and not allowing enough time for the heat to be properly distributed towards the center of the meat. This tends to result in a steak that's overdone on the outside and not cooked enough in the middle. The proper way to fry a steak is to start out with high heat. Quickly brown one side and flip. Fry for a few seconds or so and turn the heat down and continue to fry at low heat. Turn the steak about every minute or so. The classic French method of frying a steak would be to brown the meat and then finishing it off in the oven. I've found that this is unnecessary. They test the theories several ways and publish the science and results that back up their assertions. Hundreds of thousands of others also have the same opinion. There's even a SeriousEats reddit group where Kenji and his friends often contribute (https://reddit.com/r/seriouseats/), as well a newly opened and highly acclaimed restaurant (not a pretentious fine dining restaurant), and a highly acclaimed cookbook. And on that 1% occasion I completely disagreed with their method (boiling an egg), they came back a couple-few years later and said, "You know what? We were totally wrong!"
