When I was a kid, my mom made a taco casserole. She got the recipe from our
neighbor who was Canadian. I am not sure what all went in it as I no longer have the recipe. But it told you to use a bag of Doritos and listed the size by price. I want to say 79 cents, which is a joke now. I doubt that a single serve bag of chips would cost that little. The problem? They changed the Doritos since I was a kid. At the time the recipe was circulating, there was only the one kind. Then all of a sudden they went to the flavored ones. Ick. Eventually they added the toasted corn ones which are similar but not available in all areas. But... While they are fine for just eating as chips, they don't work as well in this casserole. None of the chips that I tried did. Just not the right texture but the taste was fine. That would probably be my all time favorite. And yes, I do try to recreate it although likely not the same as my mom was a big fan of packets and things. I don't recall her using fresh vegetables in casseroles, but I do. I also realize that some people don't like casseroles. But as hot foods go, those and soup are probably my favorite things. What are your favorites? |
