Default Broccoli Casseroles

These were posted to rec.food.recipes today. Note the second recipe has
spaghetti in it and is from the "Diabetes Prevention Plan". HA!! What a
joke.
Just use spaghetti squash instead.

If you want me to run it through MasterCook for the nutritional info,
give me a shout here. I will eventually import them into my files.

Casserole-Best Broccoli Ever

2 pounds frozen broccoli -- thawed and drained
2 cups sour cream
4 ounces pimentos -- diced
8 ounces mushrooms -- chopped
12 ounces cheddar cheese -- shredded

Combine broccoli, sour cream, pimentos, mushrooms. Put in ungreased
casserole and top with lots of shredded cheddar cheese. Bake in oven at
350 for 30 minutes.

Casserole-Broccoli and Italian Sausage

12 ounces Italian sausage -- casings removed
1 1/2 cups mushrooms -- chopped
1 10 oz. pkg. frozen chopped broccoli -- thawed, see note
1 clove garlic -- crushed
2 1/2 cups spaghetti -- cooked
1 1/4 cups mozzarella cheese -- shredded
provolone cheese
2 cups fat-free egg substitute
2 tablespoons Parmesan cheese -- grated
vegetable cooking spray

Preheat oven to 400 degrees, and coat a large nonstick skillet with
cooking spray and place over medium heat. Add the sausage and cook for
several minutes, stirring to crumble until the sausage is no longer
pink.
Add the mushrooms, broccoli or spinach, and garlic. Cover and cook for a
few minutes more, until the vegetables are tender. Drain off any excess
liquid. Place the sausage and vegetables in a large bowl and toss in
the
spaghetti. Next toss in the mozzarella and egg substitute.
Spray a baking dish with cooking spray and spread the pasta mixture
evenly in the dish. Sprinkle the Parmesan cheese over the top and spray
the top lightly with the cooking spray. Bake uncovered for about 20
minutes, until the center of the pie is set but still moist. Let sit for
5
minutes before cutting into wedges and serving.

Casserole-Broccoli and Mushroom

2 cups butter
9 cups broccoli -- chopped
7 cups mushrooms -- sliced
5 cups onions -- chopped
4 cups carrots -- diced
2 cups water chestnuts -- sliced
3 cups half and half
1 cup mayonnaise
1 1/3 tablespoons Worcestershire sauce
2 cups cottage cheese
3 cups cheddar cheese -- shredded
1 cup bread crumbs
5 eggs
salt and pepper to taste

Melt butter in a large casserole dish over low heat. Add the
broccoli,
mushrooms, onion, carrot and water chestnuts. Cook over medium low heat
until the vegetables are tender, about 12 - 15 minutes.
Mix the half and half, mayonnaise and Worcestershire sauce together.
Stir into the vegetable mixture. Mix together the cottage cheese,
cheddar
cheese, bread crumbs and egg. Stir into the vegetable mixture and cook
until heated through, about 5 - 10 minutes. Season with salt and pepper
and serve.

Casserole-Dutchess County Broccoli and Cheese

4 heads broccoli
3 eggs -- beaten
1 cup ricotta cheese
1/3 cup cheddar cheese -- grated
1 tablespoon cornstarch
1/2 cup milk
1 medium onion -- chopped
salt and pepper -- to taste

Preheat the oven to 350 .
Boil the broccoli heads in water for about 10 minutes. Drain them,
and
then chop them coarsely, including the stems. Combine cornstarch and
milk
in a small bowl and mix well to combine.
Beat the eggs in a deep bowl, add the ricotta and cheddar cheeses and
the cornstarch-milk mixture. Mix thoroughly. Add the chopped onion,
salt,
and pepper. Add the drained broccoli, mix again, and blend the
ingredients
well.
Butter thoroughly an ovenproof baking dish and place the broccoli
mixture in it. Bake until bubbly, or about 30 minutes. Serve hot.

Casserole-A1 Sausage

1 pound smoked sausage -- sliced 1/4" thick
2 14 oz. cans diced tomatoes -- drained
2 large baking potatoes -- peeled and chopped
1 large white onion -- chopped
3 green onions -- chopped
1/2 green bell pepper -- sliced
1/2 red bell pepper -- sliced
1 jalapeno chile pepper -- seeded and chopped
2 large yellow squash -- peeled and sliced
4 medium zucchini -- thinly sliced
1 teaspoon cayenne pepper
salt and pepper -- to taste
Parmesan Cheese -- grated

Brown sausage in large frying pan. Add the rest of the ingredients,
except the green onions. Smother down, then transfer to a greased
casserole dish, in layers. Sprinkle Parmesan cheese between the layers.
Cover the top with a lot of Parmesan cheese. Bake at 350F for 30-40
minutes. Remove and top the casserole off with the green onions. Serve
with steamed asparagus and warm French bread.
