We had green bean casserole yesterday too plus another green bean
dish that apparently I started as a tradition several years ago,
bacon wrapped green bean bundles. This time they were made by one
of my nieces. So good.

The popularity of this very old recipe is it tastes good and is very
easy to make, leaving plenty of time to make a pie or whatever else.

There is nothing at all wrong or not nice about a mother raising her
sons to know how to do things for themselves. That doesn't make them
pet monkeys, it makes them self-sufficient. After all, you can't count
on the son marrying someone who will wait on him hand and foot. This is
2015, not 1915.

All summer I eat more than enough green beans from my garden to last
me the rest of the year so now it's time for different... my winter
veggie is Popeye's favorite, I don't grow spinach so for Thanksgiving
I prepared a large pot of creamed, I make it a la Horn & Hardart, I
use chopped frozen spinach, this time three 1 lb bags... very easy but
fresh ground white peppercorns is important:

That's a good one for people who are avoiding flour, dairy etc. I
switched to a melange of roasted brussels sprouts, butternut squash
and onion this year and sprinkled it with a few pomegranate seeds to
serve.

Another one that calls for canned soup is "hashbrowns" casserole. I
haven't made it myself, but I've eaten it and it's tasty enough to
want a second helping. Suppose you could make your own condensed
soup, but it's only once or twice a year.... for me, less than that
because it's not a family tradition at a certain time of year. I need
to be invited to a party that has it out on the buffet table.

That was a pretty decent Pioneer Woman recipe. Did you use the
pomegranate molasses as well?

I agree. I've not made that one either but I've had it at others
places as a fast easy side dish and with several variations, some
pretty close to what I'd call tex-mex. It leads to playful additions!

No. I had it, but decided to use a drizzle of maple syrup on the test
batch instead (which was a good decision). I adjusted the seasonings
to my taste for Thanksgiving and didn't think it needed anything else.
I thought the pomegranate seeds were pretty, so I used them, but I
didn't think they brought anything to the party.

I made that hashbrown casserole in a crockpot (easy to keep warm) and
took it to work for a pot luck lunch. It was well received (the
crockpot was empty in no time). It was actually quite tasty but that's
the only time I've ever made it.

I have made a mashed potato dish that calls for WHIPPED cream cheese,
which makes the dish delicious without the heaviness of the solid stuff.

Using mashed potatoes that serve eight, stir in one container (I think they
are about 5-6 ounces or anyway, one of those small containers) of whipped
cream cheese, one beaten large egg, a few parsley flakes, salt and pepper,
some minced garlic pour into greased casserole dish, sprinkle with paprika
on top and dot with about two T. of butter. Bake at 350 for 30 minutes.

you can use whipped cream cheese with chives if you like.

It is really good, and a new way to serve mashed potatoes that doesn't
call for gravy. I like to make it when I serve ham.

Green bean Casserole

As some may know, I had been seeing 'green bean casserole' included in
the
menus here for Thanksgiving and asked about it. I understand that some
folk
like to use soup for the sauce, but I don't like that soup and sf was
kind
enough to post a recipe which didn't use the soup.

I changed it a bit, but only so far as making it all from scratch.

So, we had it for lunch today and we really enjoyed it)) I made it
all
from scratch ... fried my onions ... the bread was my own (wholemeal
with
added seeds) and I used heavy cream and chicken broth with garlic and
seasoning for the sauce I made half the amount in the recipe sf posted
but
there was still a lot left. I asked DH if he wanted me to throw it away
or
save it and he said noooooo save it, I will eat it later) Can't get a
better recommendation that that!!!

I thought it looked really pretty. I'm going to make it today. I
would have made it for T-day except I didn't have any pomegranate
arials or molasses. Did you feel the syrup was essential? I was
wondering if it would benefit from the addition of a salty component?
Maybe a smidge of crumbled bacon/pancetta or maybe some nuts?
