Default Nice Fresh Veggies

I just got back from the farm stand. For $10 I brought home a couple of
good sized acorn squash, ditto a couple of butternut squash. I also got
a cabbage, a paper bag full of new potatoes and a couple of good sized
sweet potatoes. Oh, and a bundle of leeks.

While I was selecting an acorn squash a ladybug (ladybird beetle) landed
on my hand. The man exclaimed, "That's good luck!" Yep, it's good
luck to have these farmers selling really good fresh produce nearby.

Love the farmers. It does not get fresher unless you have the plants in
your own back yard. Price is sometime higher than the supermarket, but
well worth it for freshness.

I like the squash roasted. Looks like you will be eating well this week.

I'll be eating well for more than a week. Winter vegetables last a long
time when properly stored.

Yes, I adore roasted acorn squash. Split, seeded and butter, S&P.

Butternut squash... might make soup. I may use the leeks to make soup, too.

I will definitely bake the sweet potatoes. I treat them just like
regular baking (white) potatoes. Skins rubbed with butter then
sprinkled with salt. Baked, about 375F about an hour. Nice crispy skin
outside, tender inside. A little butter, S&P, sour cream if you like.
