I went to the farm stand today and got a few items for $8. If the rain
holds off (it rains daily this time of year) I'll be grilling these
lovelies:

Otherwise, I'll slice them thinly, lengthwise and arrange them in a
shallow baking dish, seasoned simply with S&P and lightly drizzled with
olive oil. Bake at about 325F until vegetables are tender and slightly dry.

I'll probably save half the eggplant to slice into rounds, dredge in egg
wash then in seasoned flour and pan-fry. That's the way my mom served
it when we were kids. Love it!
