Default America's Test Kitchen

I can now watch a cpl seasons worth of this TV program. Not as bad as
I once thought. Lotta claptrap, but occssionally some good ideas.

I watched the ep which includes both shepards pie and DIY corned beef.
Good tips I'm gonna give a try. Also watched the Herbed Pan Fried
Steak ep. The "semi demi glaze" recipe was particularly interesting.

Ol' Pompous Bow-Tie Man is still a lingering annoyance, but easily
ignored, now that I understand his agenda.

Imo, America's Test Kitchen and Cook's County are 2 of the few good
cooking shows left on television. Sadly, I usually miss the shows. I
rarely watch tv that early on Saturday mornings.

They come on here late at night. Likely reruns.

I only have a DVD player. It doesn't record.

I *do* still have my old VCR still hooked up but it froze up do to
sitting unused for a year or two. I almost threw it out but have held
off thinking there might be some way to get it working again.

It worked fine the last time I used it. Then I went to use it the next
time after about a year or more and it didn't work. Some wheel or
whatever has stuck. Put in a tape and it tries to play but then it
ejects it immediately.

Anyone knowledgeable with electronics have any ideas what I need to
move/oil or should I just throw it out?

You could probably find one for $5 someplace or ask friends if they
have one to give you. Had you asked a couple of months ago I'd have
given you one.

My guess is that a rubber belt needs to be replaced. Open the VCR and
look for a loose or broken belt. You might be able to reuse the existing
belt by cleaning it to remove any glazing. I'd use MEK for that. If you
need to replace it, finding the correct one could be a problem. Mostly,
I used to use one that looked about the right size. Other than that,
servicing the VCR would be cleaning the heads and greasing the moving
metal parts. There's probably a ton of info on how to service a VCR
online. Good luck.

The only free recipes they give you are from the current season and
you know it's from a past season when that happens. When it does,
move on and find a food blogger who has tried the recipe - you can
usually find one that's verbatim and if it's not, they tell you what
they did differently. At least that's been my experience so far.

Julie. I told you that you *know* it's not the current year when
that happens. They don't tell you that's WHY it happens, it just does
- and then it's up to you to figure it out.

I was on his free trial mailing list and enjoyed accessing his site. After the trial subscription ran out I got a few, no more than 5 or 6, wanting me to join for a fee but they stopped after that. I get a newsletter about once every 6 weeks from him.


And what's with that silly statement you made about tasting the yucky food as well as the good? Nobody is made to taste anything disagreeable. I don't think you've ever seen the show but you must be in the middle of every discussion even though it makes you look as stupid as ever.

Have you not seen the part of the show where he taste tests? Things I can
remember were mustard, tortillas, ice cream, macaroni and cheese... I know
there were a lot more. It's a different food every week and he always has
to do it. There aren't always bad ones on there but there usually is at
least one.

You sound as stupid as ever. He is tasting products on the market to determine which has the better tasting/texture/and value. He wouldn't do it if he didn't want to but you make it sound like he is be forced to do this. And if you paid attention the audience also tasted the same products and gave their opinion which was the better of the choices offered.

I didn't see their recipe (I'm signed up for the freebie looks, so I
guess it's not a show from a current season), but I like Julia Child's
- I bet it's another good use for the slow cooker, with the lid off.
Mushrooms and tomato would make it even yummier.

Semi-Demi-Glace

Makes: 1 cup

2 quarts homemade beef stock
2 tablespoons red wine (optional)


Directions:

1. In a large saucepan, bring stock to a boil.

2. Turn heat down to the lowest heat setting and allow to simmer for
several hours until stock has reduced to 1-2 cups (remove any scum
that rises to the surface as it simmers).

3. It has reduced to demi-glace if it thoroughly coats the back of
the spoon.

I know what his agenda is. It's to have a successful publishing
empire. PBTM is a journalism major. He got into cooking cuz it has a
huge audience. He admitted it in an online interview, which has since
mysteriously disappeared. I can't fault the man for fulfilling his
dreams, even if I find his magazines to be trite and mostly useless.
All you gotta do is watch the guy to see it's obvious he's not a chef
or even wants to be. I'm no saying he doesn't enjoy cooking, but he'd
rather be the big cheese than be an expert on the subject.

If he annoyed me as much as you are whining about him I wouldn't watch him for all the pie crusts in the world. And if his magazine is trite and useless why look at them?? It's just like a car wreck for you, isn't it?? You know you shouldn't look but you just can't tear yourself away. All the cooks on the show are pretty good. Especially the blond eye candy. I've never found any of their shows lacking substance. So the bow tie guy is into marketing. Big deal.
