I didn't see their recipe (I'm signed up for the freebie looks, so I
guess it's not a show from a current season), but I like Julia Child's
- I bet it's another good use for the slow cooker, with the lid off.
Mushrooms and tomato would make it even yummier.
Semi-Demi-Glace
Makes: 1 cup
2 quarts homemade beef stock
2 tablespoons red wine (optional)
Directions:
1. In a large saucepan, bring stock to a boil.
2. Turn heat down to the lowest heat setting and allow to simmer for
several hours until stock has reduced to 1-2 cups (remove any scum
that rises to the surface as it simmers).
3. It has reduced to demi-glace if it thoroughly coats the back of
the spoon.

What do you think his agenda is? I see Bow Tie Man playing the same
role on ATK that Jacques Pepin's daughter played when she was on JP's
show. They are rather harmless and the voice of those who don't have
much kitchen experience. I don't find that annoying, but apparently
some who claim to have experience in a professional kitchen do.
