America's Test Kitchen just had an episode on apple fritters and I had a
*duh* moment! They said to keep them from getting soggy, to add the chopped apples to the dry ingredients and mix them in well. I do know to do this! I have made plenty of things with fruit in them over the years and always did this when I baked. But this recipe didn't say to do this and I just plain forgot! The finished product did in fact turn out soggy by the next day. Still edible, but a tad soggy. Hopefully these will fare better. I also a different glaze, the one they did on the show which used apple juice as the liquid and also cinnamon. They did not add vanilla but I added some. Still the extract as my beans have not arrived yet. I hope that was not the missing Fed Ex package. The Fed Ex guy brought me a package the other day and said that his records said that I had another one. But he didn't have it. Perhaps it was on another truck? But it never arrived. Everything else that I have ordered has been accounted for. |
