Grocery store zucchini is never more than 6 inches long, so I pounce on the slightly larger ones when I see them because I love to stuff zucchini. -- Food is an important part of a balanced diet. |

In my tiny mini-FP I put a clove of garlic and some fresh herbs from outdoors. I whizzed them up. I thawed a packet of puff pastry and laid it out on baking paper. I used a brush to cover all but about .75 inch of the pastry with some of the oil. I used a mandolin to cut very thin slices of onion, loosened them, then covered both pastries where there was oil. A sprinkle of salt ensued. I then cut very thin slices of fresh tomato and arranged them on one tart, very thin slices of zucchine for the other one. I tore basil over the tomato one, and a mix of marjoram, parsley and basil on the zucchine one. Using the brush, I dripped the flavored oil over the vegetables. Some fresh pepper on the squashy one. Into a 200C/400F oven for 15 minutes or so. Cool, cut and serve at room temperature. -- Food is an important part of a balanced diet. |
