Nice photo! Yes, it depends on the seasonings. Summer squash is bland
enough that it can be used in a lot of different ways.

When summer squash gets too large the inside is "pithy". Perhaps that
was the issue with your large squash.

What was your problem with them? Sometimes home grown zucchini is
bitter, no idea why. Grocery store zucchini is never more than 6
inches long, so I pounce on the slightly larger ones when I see them
because I love to stuff zucchini.

Summer squash is very good roasted; slice lengthwise, brush with oil,
season, and put in a roasting pan in a 375 oven. However my first
inclination when I have a glut of summer squash is:

Yes I am thinking of grating it into things. I always like to make sure we
get plenty of fresh veggies so that is another I can use.

I slice/dice summer squash into tossed salads, works well with various
dressings.

You can find fancier recipes on the internet, but I like this one for
its simplicity.

In my tiny mini-FP I put a clove of garlic and some fresh herbs from
outdoors. I whizzed them up.

I thawed a packet of puff pastry and laid it out on baking paper. I
used a brush to cover all but about .75 inch of the pastry with some
of the oil.

I used a mandolin to cut very thin slices of onion, loosened them,
then covered both pastries where there was oil. A sprinkle of salt
ensued. I then cut very thin slices of fresh tomato and arranged them
on one tart, very thin slices of zucchine for the other one. I tore
basil over the tomato one, and a mix of marjoram, parsley and basil on
the zucchine one. Using the brush, I dripped the flavored oil over the
vegetables. Some fresh pepper on the squashy one.

Into a 200C/400F oven for 15 minutes or so. Cool, cut and serve at
room temperature.

You'll never convince her (or Julie) that the only reason to "join" is
if you want to Pin/save in an image based format.
