Default Fish and Eggplant Stew

Well, tomato curry, not stew - call it what you like, it's a favorite of
mine.

My wife made it last Friday, and I had it again Monday, and will finish
it up tonight.

Could it be one of those few dishes that makes eggplant palatable?

Are you serious? Eggplant is lovely combined with tomato. This is my
current favorite recipe. Don't forget the pomegranate molasses.

There are several Afghan eggplant recipes that are wonderful also. I
think the key commonality is that none of these good eggplant recipes
are breaded and fried.

I'd like to see some of the other recipes you mention. This dish
couldn't be less like a breaded eggplant dish - I find those generally
tasty but also filling without being satisfying.

That would be true if breading and frying is comfort food for you.

Here are some eggplant recipes that appeal to me:

Thanks - I can certainly agree with you on that point! I have several
eggplant recipes that I've either made or want to make and none of
them include breading and frying.

Absolutely nothing wrong with slices of breaded, fried eggplant! YMMV

My favorite method for cooking eggplant is grilled, cut thick slabs,
brush both sides lightly with oil, season to taste, and grill both
sides, EXCELLENT... and doesn't sponge up oil like fried... I usually
grow the long thin oriental eggplants and slice them lengthwise for
grilling (a lot more fits on the grill than round slices). Grilled
eggplant works very well for eggplant parm... don't really need any
stinkin' oily breading. I like a grilled slab of eggplant on a
burger. When I have a big crop I grill lots, they're even good cold.

Yes. There are some dishes with eggplant that are good. If it is
especially good with tomatoes, those types pf recipes might qualify. I
don't hate eggplant but most of the time it just doesn't turn my crank,
which is probably why I have never cooked it myself.

Looks interesting.... despite my many failures with lentils.

I honestly do not understand the word "failure" coupled with
"lentils". That's extremely hard to do, IMO.

"Unnecessary" would be the operative word for me, because I did find a
recipe that calls for a very small amount of lentils that I still
can't figure out "why"... so I leave them out when I make it now.

Speaking of lentils, do you ever make lentil samosas?

It's a favorite treat here around fall and we use lentils with whatever
else is fresh and good, often late season peas and generally ground lamb.

We've used both phyllo dough as well as egg roll wrappers with egg wash
and a bath in hot peanut oil to cook. The phyllo is fiddly to work with,
but rewarding. The egg roll wraps are pretty foolproof.

A good spicy mint chutney with them is sublime.

I found this page to be a fun read:

http://www.journeykitchen.com/2011/0...ke-samose.html

My Indian foods cookbook is out on loan else I'd share a fairly
foolproof Naan recipe.

I don't understand it either. I have tried making lentil soup a few
times and it just never good. I have had good lentil dishes cooked by
other people.

It can be very nice indeed, but its one vegetable that tends to take a
little more time and effort in recipes than other veggies...

That looks interesting, thanks for the link.

Do you add the caraway seeds? I think I'd be tempted to leave them
out.

Generally, yes, we do add the caraway seeds, although it's fine without,
too. I think we made it the first few times without them but, once we
tried the caraway, we liked it and it's stayed. You don't taste it as
such, it just sort of blends in.
