Default Grilled chicken

Is there a good way to store leftover grilled chicken so that the crispy
skin is retained? I grilled some awesome chicken last night but the
leftover pieces had skin that was soggy and not worth eating. Fresh off
of the grill it was crispy and full of flavor from the marinade.

The leftover meat was still good but it would have been better to have a
bite with crispy skin. Oh well. I like to cook extra to have some for
breakfast or lunch the next day. I still eat leftover chicken over the
sink in the kitchen. These were bone-in thighs with skin. Great
sale on them so I got the family sized pack. Great sale on breast
quarters with bone, too, so I have a bunch of those to grill. I've been
more into chicken for my protein than beef lately.

I get closer to good results by storing in a single layer, uncovered,
on paper towel. That way I avoid steaming from warm chicken. After
the chicken is totally, totally cold, you can probably store covered.

Neat idea. I'm going to try this. I usually wrap leftovers in foil but
I could put them on paper towels in a container and leave off the lid.

We had a discussion recently regarding which holds better in the frig,
standard deep fried KFC or their grilled.

The grilled lost and the skin never returns as well, even under
convection roast.

Best bet - convection roast low and slow at 300F.

Then a quick flash under the broil element - maybe 2 minutes.
