We had a discussion recently regarding which holds better in the frig,
standard deep fried KFC or their grilled.
The grilled lost and the skin never returns as well, even under
convection roast.
Best bet - convection roast low and slow at 300F.
Then a quick flash under the broil element - maybe 2 minutes.
