Default Non-stick wok


Hi all,
Have a problem within the house of steel utensils being used on Teflon
coated pans/wok.
Saw a programme featuring Lodge making cast iron seasoned pans and
after looking around can find no outlet in the UK.
Has anyone any suggestions/recommendations for an alternative?
The wok is the most abused and needs a replacement.

at one time, i had a wok i got from chinaTown in edmonton alberta. it
wasn't seasoned, but did an outstanding job. it was a cheap job, but
worked well. i used it for stir fries only. a bit of oil in there,
and no problem. i no longer have a wok, but use a cast iron seasoned
pan instead. no big difference for stir fries.

A wok should not be non stick but spun steel. The whole point of a
wok is that you can have the center very hot for cooking and the sides
cooler. Once the food at the bottom is cooked it can be moved up the
side (where it will stay). Poorly conducting steel helps keep the
sides cool.

Default Non-stick wok

Get some coarse steel wool and remove the non-stick coating from the wok. Either that, or replace it with a plain steel one. Whichever you do, season it as you would cast iron. http://users.rcn.com/jyavins/season.htm If it can rust it can be seasoned. Otherwise not. I can scramble eggs in my wok. No big deal.

I think the very best woks are made of carbon steel without any
coatings. Look in the Asian grocery stores. Many that specialize in
Chinese products will carry carbon steel woks.
