Migas (using the southwestern U.S. definition) are probably my all-time
favorite egg dish for breakfast/brunch. But much more often we'll make a poached egg because it's simplest. My ideal poached egg is on lightly-toasted sourdough with olive oil and harissa. If it's an evening meal, maybe a goat cheese souflee (sp?) has the edge. Steve |
