Default spices

Just got done drying some peppers. Chili, habaneros. I notice a trend using
spices, some are not just dried, but they actually roast. I have a turbo
oven that's set at 135 degrees, and it will turn things brown. My cili
pepper is wonderful orange color, and smell a lot different from mcCormick
which is brown. Same thing with habanero I bought, brown. I use maximum of
125 degrees, but prefer sun drying. I don't have that sun window anymore
and using a dryer with adjustable thermostat. I'm going to try and make
some tomatoes, but will keep most dry.
