Default What's a good fish for deep frying?

We just got a Waring Pro deep fryer.
I wanted to try some beer-battered fish.

I can't find haddock at the local stores.

What are some other types that are good for this?

Halibut is pretty good deep fried. Once while in a restaurant in Paris
one of our party had a wonderful looking deep fried fish. It was a
whiting that had been gutted and butterflied, dredged in seasoned flour
and deep fried whole. It looked good and was delicious.

Thanks for so many replies. I had assumed tilapia was too delicate.
I'll give it a try.

I did pick up some frozen red snapper filets. I'll give those a shot,
too.

Um, folks is straying... the question is about fish for deep frying, not pan
frying, even flounder doesn't lend itself well to deep frying, may as well deep
fry trout. For deep frying battered fin fish you want fish that is dry (not
oily) and not delicate or bony, one that's easy to filet. Cod is probably the
most common choice but halibut is good too.

Um, folks is straying... the question is about fish for deep frying, not pan
frying, even flounder doesn't lend itself well to deep frying, may as well deep
fry trout. For deep frying battered fin fish you want fish that is dry (not

So far, no one has mentioned SMELT.
These are small fish, widely available cleaned and frozen
at low prices from Canada. They are sold loose in bags.
They are some of the cheapest fish you can buy.

Unfortunately, they are not deboned. They are so small
(about the size of sardines) that you can eat them with
the bones, but I prefer to debone them. There's a trick
to it -- separate the spine from the flesh at the tail end,
and you can then pull the whole spine out like unzipping
a zipper. This won't work if you start from the head end.
The other bones are in the dorsal and pectoral fins, which
are easily pulled off.

Pouring down rain in the Memphis area this morning. Gonna make some
butternut squash soup. Also will put the corned beef in a pot and later add
some new 'taters. I'll run out later and buy some cabbage which I will
steam over the the nice salty cooking liquid. For the next few days I'll
have leftovers again! Who knows; the cat might even get a bite or two.

Yeah. The deep fryer was delivered the other day. I immediately
washed it, quick thawed some shrimp, whipped up some beer batter and
fried 'em up. So good.

My wife was on a business trip so I called her and crunched in the
phone.

I just use a cup of lour, and 3/4 cup of beer to start. Then whisk it
and add beer until it's the right texture. I toss some dried or
chopped parsley in there, too, but I'm not sure if it adds much. I
like the look of the speckles. :-)

I've seen that many recipes also add MSG (Accent), too.
