Um, folks is straying... the question is about fish for deep frying, not pan
frying, even flounder doesn't lend itself well to deep frying, may as well deep
fry trout. For deep frying battered fin fish you want fish that is dry (not
oily) and not delicate or bony, one that's easy to filet. Cod is probably the
most common choice but halibut is good too.
