Default For those who are gluten intolerant.

King Arthur Flour has come out with gluten free baking mixes and
flours now. I just saw a bit about
this the other day.

I don't have any problem with gluten but these might be of some
interest to those who do.

Along the same lines, St. Peter's Brewing (UK) makes a sorghum
beer -- gluten free. It's actually okay. Better than beer made
from rice, in my opinion.
