Wondering how to preserve mint to use in the winter. I tend to add mint to
water when I'm boiling vegetables, peas, potatoes, etc. - and I'm not crazy about dried herbs . I'm thinking, if I boil water & mint; reduce the water to get optimum flavour and then freeze the water for use in the winter, this might work. I have a ton of mint. Worth a try - or not. Anyone done this? Elaine |

Freeze it. I've done it, and it works great. You'll need a blender or
food processor and a liquid (vinegar, vodka or white wine are possibilities). Process to a nice choppedness. Make sure there's enough liquid to cover the leaves. Freeze in ice cube trays. Remove to a ziploc bag. In my experience, water is not a great liquid for preserving flavor though it is better than drying. --Lia elaine wrote: > Wondering how to preserve mint to use in the winter.
