Freeze it. I've done it, and it works great. You'll need a blender or
food processor and a liquid (vinegar, vodka or white wine are
possibilities). Process to a nice choppedness. Make sure there's
enough liquid to cover the leaves. Freeze in ice cube trays. Remove to
a ziploc bag. In my experience, water is not a great liquid for
preserving flavor though it is better than drying.
