Default mint

Wondering how to preserve mint to use in the winter. I tend to add mint to
water when I'm boiling vegetables, peas, potatoes, etc. - and I'm not crazy
about dried herbs .

I'm thinking, if I boil water & mint; reduce the water to get optimum
flavour and then freeze the water for use in the winter, this might work.
I have a ton of mint.

Worth a try - or not. Anyone done this?
