No, you cannot use them like water chestnuts because they are toxic.
Water chestnuts are just peeled and sliced. These water caltrop
things have to be boiled for several minutes first. Then they can be
eaten but they don't really resemble water chestnuts. Usually people
just munch a few as a snack, after boiling them. -aem
