Default Dinner - Cince De Mayo

Today is a busy day so Dinner needs to be easy - In addition the upper spray
bar of the DW broke - part on the way. Ergo anything that can be served on
Paper is welcome.

Dinner

Sautéed ground chicken with TJ'S roasted yellow corn , onion and diced
Jalapenos,

Served over a giant plate of home made corn tortilla chips fried in 1/2 lard
1/2 Veg oil.

Smothered in fresh grated cheddar cheese

Zapped to melt the cheese.

Sides Fresh Pico De Gallo (minced this time) Fresh Salsa, diced tomatoes, &
a simple chunky Guacamole of Avocado & Mexican Lime. ( I like the avocado
flavor don't need all that other crap (filler)

Of course the Mandatory Margaritas or Corona or Dos Equis dark.

pan fried ny cut steak, baked spud (with vinagrette dressing from
fresh & easy...it's not too bad)...sauteed in olive oil & lots of
fresh garlic, haricot vert green beans from tj's, done in a cast iron
pan; later tonite home made strawberry sherbet if it gets frozen
enough)

harriet & critters (j j the world famous jack russell terrior who is
sitting by the front door; faddy tabby catty who is resting under the
dining room table)

I have made some chicken cooked in a chili gravy of sorts. It is now
off the bones and black beans are cooking in the gravy. I plan to
serve them with warm tortillas, sour cream, cheese and salad. I am
sauteeing some squash ribbons, too. Of course I bought all this in
gigantic Silver Spring and Wheaton supermarkets.

I wish! I don't even know how to make margaritas and I hate beer, but
I'd like margaritas...

First you need tequila. Then lime juice and Cointreau. *I* would
also add a little simple syrup. Otherwise it will be rather sour.
Play with the proportions, as I know that any cook would do. Mixed
easy on the tequila, they're quite yummy. Feel free to water it a bit
too, if it has too much bite, though putting it on ice usually gets it
about right.

What if being hugged by female chefs embarrasses him? What if the
real Blake is shy and has no sense of humor? One never really knows
these things.

Sushi. Maki-sushi. Lots of it.

What happened: My wife teaches 3rd grade and just finished a social
studies section on Japan. She got the idea to let them all try some
sushi, volunteering me to make it. And planned the event for May
6th. Wore her kimono to school, etc.

So on May 5th, I made a bunch of California rolls, another bunch of
crunchy vegetable (carrots, daikon, cucumber, avocado) rolls, and a
somewhat smaller bunch of ahi rolls (for the more adventuresome
kids.) By the time I was done, I didn't want to cook any more!

Yesterday, I made a Seis de Mayo dinner instead, with no historical
meaning whatsoever :-). Chicken enchiladas (one of the better
recipes I've tried - turned out well), some Chiles Rellenos, some
Mexican Rice, and refried beans.

(The sushi tasting apparently went pretty well. A few kids were
familiar with it and enthusiastic, a few had no clue but were pretty
enthusiastic, and a very few pre-Republicans were not about to try
anything new at all :-). They all had fun trying to use the optional
chopsticks.)

i never turn down a hug, even though they are probably not the best in a
wheelchair.

i think i'm pretty much the same in here as in Real Life„¢. maybe less
inclined to butt in.
