I cut up Idaho potatoes by hand and was just wondering what to try to

The Bron mandoline can do the job in fine fashion...if you are willing
to dump 200 bucks. The next question.....how many are you doing
in one shot? Four servings or fifty servings? If you are making
four servings, you will find your hand method with a good knife will
do the job. It will take you longer to clean a Bron mandoline than
hand slice four servings.

$1.39 will buy you 2lbs of pre-cut, par-cooked, and optionally
spiced/battered frozen fries from the grocery store.

There are very few things I refuse to make at home, and one of those
things is french fries from scratch. Store bought are better,
cheaper, and more consistent. I'm sure y'all think you make great
fries at home, but I'd still think they were inferior.

I like my fries chunky and well browned, like most fish and chips
shops here do. I've never found a frozen fry like that, so I make my
own.

And I use a 1/4" potato chipper I bought at a yard sale. It's a
unitasker, but it's good at what it does.

I do I always make big chunky crinkle cuts.

Most mandolins some with the vertical blades come making everything from
shoestring to steak fries.

If I made french fries I'd cut the potatoes with my Cuisinart with its
6x6mm slicing disk in place. It's the one I use for making hash browns,
too.

Ok I'll jump in, try a cooking shop, look for a coarse chip maker
(sits on a counter) alot have them in the bargain bin because they
don't sell well. Just wash the tatter, put in the slide and lift the
handle, perfect rough cut chips 1/2 inch square..something like the
English chip sold everywhere in London. I've got my Grandmas, seen
them in antique shops and garage sales as well.
