Tom's Mighty Squashed Soup
Hello everyone, New poster, thought I'd come in with my favourite soup recipe. Tom's Mighty Squashed Soup Half a large butternut squash (I use the bulbous end and save the "solid" end for roasting) 2 medium onions 3 large carrots 2 cloves of garlic (all the above peeled and chopped up) 1 teaspoon of cumin 2 teaspoons of veg bouillon powder 1/2 (half) a teaspoon of ground ginger Salt and pepper to taste 2 or 3 pints of water A roast chicken carcass. After you've eaten all the meat on a chicken, break up the carcass and place in a large pan with 2 or 3 pints of water, cover and simmer for an hour. Strain to take out all the bones, skin ect. Now you have chicken stock. Into this place the chopped up veg and the cumin and ginger. Simmer for 40 minutes or so, then blend/liquidise any way you like. I use a "whizzing stick" (no idea what they are called really, it's a small blade on a handheld motor) until it's really smooth. Taste and add salt and pepper. This is not just the best soup I can make, it's the best soup I've ever tasted. Cheap, easy and low in calories, freezes well too. Makes about 6 good sized portions Tom |
