Default I am mighty

I feel like a cooking goddess today, even though I did less than a
lot of you do in your regular day-to-day lives. Anyway, I'm gonna
tell you about it anyway.

A friend's husband's been in the hospital, so I thought I'd take her
some dinner so she wouldn't have to cook for her family tonight. She
said yes, so I tried to decide what to make that would be good and
portable. I had it narrowed down to lasagna and enchilada casserole
(like enchiladas, but lazier), and James picked the enchilada casserole.

Now, this Friday is our big Halloween party (y'all are invited!) and
I'm making pumpkin curry soup, so I need chicken stock for that, so
I decided the enchiladas would be made with chicken, to kill two
birds (literally) with one stone.

At the store, there were five kinds of cheese I couldn't decide on,
so James said, "Hey, let's get all five, and then you can make
double the casseroles and freeze two of them." And we were off.

Two chickens, a pound of chicken feet, 52 ounces of cheese, two big
cans of enchilada sauce, two onions, 54 corn tortillas, and some
garlic later, what I ended up with was four enchilada casseroles and
nearly a gallon of chicken stock that's so good I wouldn't be
ashamed to serve it on its own, but it's gonna make some kick-ass soup.
