Default SW Lasagna Recipe

2 cups chopped cooked chicken
1 cup chopped red bell pepper
1/4 chopped fresh cilantro
2 cloves garlic
1 jalapeno pepper- chopped
1 (15 oz) can corn, drained
1(15oz) can black beans drained
1 15 oz can tomato sauce
1(10oz) tomatoes and chilies , drained
1 8 oz can tomato sauce
2 teaspoon ground cumin
1 teasp chili powder

I 16 oz container sour cream
1 8 oz package of cream cheese( lite may be used)
6 oven ready lasagna noodles
1 8 oz package monterrey Jack cheese with peppers, grated
1 8 oz package cheddar, grated

In a large pot combine chicken and next 12 ingredients, bring to a
boil over mediun heat and simmer 15 minutes
In a medium bowl combine sour cream and cream cheese

preheat oven to 359 lightly grease a 9 by 13 baking dish

spoon 1/3 sauce in dish, top with three lasagna noodles, spread 1/2
of sour cream mixture over noodles, top with 1/2 of cheese, repeat
layers.

bake 35 to 40 minutes till bubbly.. let rest about 10 minutes before
serving
