I always allow 10 minutes for the lasagna to sit, after coming out of
the oven and before serving, as otherwise it would look sloppy on the
plate and presentation is an important aspect of any good meal.

I don't know about that last bit. I've never seen a gumbo which was
*attractive* but I've had plenty which were delicious.

I allow lasagna to sit because it has a better flavor and texture afterward.

That's not necessarilly true. That only works it it tastes good to
begin with... over time whatever flavors are there become amplified...
so if at first it tasted awful over time it will taste disgusting.
