Got back yesterday afternoon from visiting my parents. Rumours of Dad's
impending death were greatly eggazerated. Fact is, he perked up and started staying out of bed and eating more. And I cooked for them. Meatball subs, smothered pork chops, etc. Christmas Day I roasted a cornish hen and an acorn squash. Dad didn't want any but mom and I indulged. I cooked breakfast for dinner a number of times. Showed Mom how to bake bacon. Christmas Day I made cornish hens New Year's Day I made this: 1 lb. boneless skinless chicken thighs 1/2 cup low salt soy sauce 1/4 tsp. ground ginger 1/2 tsp. black pepper 1-2 cloves garlic, minced 1/2 tps. ground ginger 3 Tbs. orange juice 1 Tbs. brown sugar or honey 2 Tbs. orange juice or water and 1 tsp. cornstarch ---Thickener Lightly brown the chicken thighs in a skillet in about 2 Tbs. oil (without skins they'll mostly turn grey). Combine remaining ingredients and pour over chicken. Cover and simmer 15 minutes. Turn chicken and simmer 15 minutes more. Serve with curried rice, steamed asparagus and lightly toasted sourdough rolls. Happy New Year, everyone! Jill |
