Happy New Year! And a chicken recipe
 
Got back yesterday afternoon from visiting my parents. Rumours of Dad's
impending death were greatly eggazerated. Fact is, he perked up and started
staying out of bed and eating more. And I cooked for them. Meatball subs,
smothered pork chops, etc.

Christmas Day I roasted a cornish hen and an acorn squash. Dad didn't want
any but mom and I indulged. I cooked breakfast for dinner a number of
times. Showed Mom how to bake bacon. Christmas Day I made cornish hens

New Year's Day I made this:

1 lb. boneless skinless chicken thighs
1/2 cup low salt soy sauce
1/4 tsp. ground ginger
1/2 tsp. black pepper
1-2 cloves garlic, minced
1/2 tps. ground ginger
3 Tbs. orange juice
1 Tbs. brown sugar or honey

2 Tbs. orange juice or water and 1 tsp. cornstarch ---Thickener

Lightly brown the chicken thighs in a skillet in about 2 Tbs. oil (without
skins they'll mostly turn grey). Combine remaining ingredients and pour
over chicken. Cover and simmer 15 minutes. Turn chicken and simmer 15
minutes more. Serve with curried rice, steamed asparagus and lightly
toasted sourdough rolls.

I went thru that 'impending death' stuff with my father for about a
year. Sure does keep you on an emotional rollercoaster!! Blessings to
all of you, especially Dad. Nan

Mom asked me upon arrival whether or not I had brought a black dress. And
she was looking through clothing catalogs trying to find one for herself.
He rallied, though. He only had a couple of bad days where he could barely
get up. By the time I left, he was eating more and making all sorts of
ridiculous suggestions (joking) like how they need to get black and red
tiles installed in the kitchen so it would look like some diner we ate in
while driving across the U.S. in the 60's.

Oh, and to all of you people who think taking care of a parent suffering
from dementia is fun... try it some time. My mom deserves a medal.

It's a heartbreaker, Jill. Your mom needs all the support she can get,
both physically and emotionally. I'm sure it's also taking its toll on
you and people would do well to remember that.

Recipe saved. Thanks. It uses stuff I have available. I'll probably
use drumsticks, though - I think I've got those in the freezer. :-)
