Default Pie baking

I've just finished baking my pies for tommorrow, and boy does my house
smell good. I've made pumpkin, cherry and bourbon chocolate pecan pie.
I'm by myself and trying to not dig in...lol.

Casseroles are put together and veggies chopped. I'm ready to go.

Hi Gina

What kind of casseroles are you doing? We've had our Thanksgiving here
in Canada, but I'm already planning Christmas menus. We will probably be
travelling to our son's and I would like to take something different this
year...Sharon

I baked my mince pie last night. I have the pastries ready for pumpkin and
pecan that will go into the oven at the crack of dawn tomorrow.

I love enjoying the early Thanksgiving morning solitude baking pies. I
don't want soggy crusts from baking pies earlier than TG day itself, and
while the pies bake I'm prepping the bird and stuffing/dressing to go
into the oven as soon as the pies are done. A big mug of hot tea and
perhaps some softly playing music (so as to not wake the house) and I'm
a seriously happy camper. I mean cook!

I spread an ounce or so of melted semi-sweet chocolate in the bottom
of my pumpkin pie crusts...seeing if it can be an effective soggy
crust preventer. And if it can't, it's chocolate!

One thing I've tried that works, is brusing the uncooked pastry with
slightly beaten eggwhite, allowing it to dry, then prebaking the crust for
about 15 minutes. Allow to cool before filling and baking.

Post-event, it worked great. The crusts were nice and flaky and
tender, not soggy at all, even cooked 2 days before serving. Pies
need to warm a bit at room temp to soften the chocolate, or it's a bit
firm for fork cutting.

I love Thanksgiving morning. Me and the dogs and a favorite movie
playing in the DVD. Galaxy Quest, Rustler's Rhapsody, Bride and
Prejudice, or maybe Lord of the Rings. A big mug of sweet coffee and milk.

Later I'll have "help" on hand, which makes everything 10 times more
difficult. At least it's only us this time. My kitchen is small and
early in my marriage trying to finish dinner with a mother,
mother-in-law, one sister and three sisters-in-law milling around would
nearly push me over the edge.

Word to the wise: If you've got "help" on hand, hide the fricken' salt
shaker.

Sweet mincemeat. Over here the terms are usually interchangable. I keep
forgetting that mince does not mean that elsewhere. :-)
