We've been gone off and on during the whole 3-day weekend. On the way home
today we stopped at the local farm market and bought some beautiful asparagus @ 99 cents/lb. What to do for a quick one-dish meal? I quick-thawed, then stir-fried some shrimp and the asparagus and tossed with angelhair pasta, a splash of fresh lemon juice, a bit of butter and cream, and some minced fresh tarragon. On the side some garlic toast. I lightly buttered and broiled thick slices of crusty Italian bread, flipped and rubbed the other side with fresh garlic, then lightly buttered and sprinkled with freshly grated parmesan cheese. Ran under the broiler again until nicely browned. Friends sent us home with a couple of slabs of a lucious concoction made of layers of rum-doused spongecake, chocolate mousse, and tiramisu-like mascarpone.
