Category : Beans Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 can pinto beans, drained well (8-ounce) 1 medium tomato, chopped 1 green onion, sliced (green ends included) 2 handfuls shredded cheddar cheese Tortilla chips Ready, set, cook! 1. Dump beans into microwave-safe bowl. Top with tomato, onion and cheese. Cover lightly with paper towel. Microwave on high for 2 minutes. 2. Sprinkle with crunched-up tortilla chips. NOTE:To freshen stale crackers or chips, lay them between paper towels and microwave on high 30 seconds. Nutritional Information: 498 calories; 22 g fat (10 g saturated fat; 40 percent calories from fat); 56 g carbohydrates; 39 mg cholesterol; 994 mg sodium; 22.5 g protein; 13 g fiber. |
