I had macaroni and cheese once at a party. It had eggs in it which kind
of made it like pasta in a creamy custard, which I've never had before, but it was so good. And it was not all orange cheesy. Anybody have a recipe for anything like this? FYI, it was in New Orleans, and the cook was an elderly black lady, so maybe it's a kind of soul food thing, maybe, maybe not. |

Just make it like quiche (use same proportion of milk to eggs) but use macaroni & cheese instead of other stuff. See? Simple. LOL. The only "orange cheesy" mac 'n cheese is Kraft, so don't even compare a good mac 'n cheese with that blue box stuff. It's gross. Use a mix of cheeses like Colby-Colby Jack-Cheddar-Swiss-Ementhaler-Gruyere -- whatever you like. N. |

It's very rich and we wouldn't have it often. I've made it with a variety of cheddar cheeses and it's been good every time. Lynne Stove Top Mac-n-Cheese Alton Brown 1/2 pound elbow macaroni 4 tablespoons butter 2 large eggs 6 ounces evaporated milk 1/2 teaspoon hot sauce 1 teaspoon kosher salt Fresh black pepper 3/4 teaspoon dry mustard 10 ounces sharp cheddar, shredded 1In a large pot of boiling, salted water cook the pasta to al dente and drain. Return to the pot and melt in the butter. Toss to coat. 2Whisk together the eggs, milk, hot sauce, salt, pepper, and mustard. Stir into the pasta and add the cheese. Over low heat continue to stir for 3 minutes or until creamy. Servings: 8 |

The easy way is to cook the macaroni and grate the cheese. Beat two eggs with at least 1.5 cups of milk. layer the macaroni and cheese into a baking dish. Pour in the liquid, top with breadcrumbs and bake. If you don't want orange cheese, then use a light colored one like Fontina or Gruyere. Susan B. |

This is a crockpot dish that tastes like a custardy baked mac & cheese casserole. All-Day Macaroni and Cheese 8 ounces elbow macaroni -- cooked & drained 3 cups sharp Cheddar cheese -- shredded 12 ounces canned evaporated milk 1 1/2 cups milk 2 eggs 1 teaspoon salt 1/2 teaspoon black pepper 1 more cup sharp Cheddar cheese -- shredded Place the cooked macaroni in a 3 1/2-quart (or larger) slow cooker that has been coated with nonstick cooking spray. Add 3 cups cheese, milk, eggs and seasonings to the macaroni; mix well. Sprinkle with the remaining 1 cup cheese, then cover and cook on the low setting for 5 to 6 hours or until the mixture is firm and golden around the edges. Do not remove the cover or stir |
