I am trying to find a pan that my mother (Italian) used for making
Ragu'. the colour was dark brown, had a single handle and I think it was made of terracotta. The Ragu' used to simmer in it very gently and when we were children were made believed that the pan was a magic one, because the content continued to boil foe a while after the pan was off the cooker. All this is to ask you for the correct English name of the pan. I've looked on the net but can't find anything. Can someone help me please? Many thanks in advance. Maria GG |

They make them there too, and all over north Africa there are similar items. A tagine might be easier to find, is made of the same stuff, works in the same way, but has that attractive conical roof... Can you tell I want one? The correct name for this would be an earthenware pot or crock. My
suggestion would be to use a slow cooker ("electric crock pot"). These come with earthenware liners and are designed to simmer all day just as you describe.
