My local Safeway made a huge mistake. They priced baby backs at
2.49/lb. The same price as the full cut on sale. Needless to say, I bought all 4 racks they had in the case. I didn't want to ask the butcher for more, lest he catch on. And these are the good ones, too. |

They are easy to portion for half racks, fit easily on a plate, bring in a lot of money. Properly cooked, spares are much better, just as tender, much better meat - bone ratio. |

Chain restaurant purchasing is probably the cause of the high price of back ribs, too. That's certainly the case with chicken wings that were damn near free twenty years ago, but now, because of the Buffalo wing craze, cost almost as much per pound as legs and thighs. --Rich |

They cost MORE. I just bought bone in thighs for 89˘, but wings were $1.59. I remember buying wings for 10˘ in a big bag because the store just wanted to move them. Baby backs were throw always years ago also. |
