I have to second the recommendation for Legends of Texas Barbecue.
It's a pretty fascinating read and the insights from the pitmasters
are excellent. Lots of cool pictures, too!

Yo John, definately a great book on the evolution of Texas Q. Lots of
insight into the business, good recipes for meats and mops, recipes
for large crowds, and explains why Q is sometimes served on a piece
of paper. When's your birthday? I'll send it to you.

photos), & part tour guide to many of the BBQ joints in Texas.
