I have to second the recommendation for Legends of Texas Barbecue.
It's a pretty fascinating read and the insights from the pitmasters
are excellent. Lots of cool pictures, too!

Legends of Texas Barbecue by Robb Walsh

This is part cook book, part history book (with lots of cool archival
photos), & part tour guide to many of the BBQ joints in Texas.
