freezer bags and store for later use but does it taste the same after it's
thawed?

Can most fruits be frozen without much effect to the texture/taste?

My guess would be a definite no on freezing pineapple. In my experience,
freezing actually effects the texture of most fruits... No fruit that I
have ever attempted to freeze has had the same texture afterwards.

The fact that fruit has been canned has already altered the texture...

I sometimes freeze pineapple for later use in pina coladas. Since
they are going to go in a blender, texture is not an issue there, but
the flavour is good.

Agreed... Flavor does not suffer, just texture.
But that does not matter if you are going to be using it for cooked or
blended recipes. :-)

Go ahead and freeze. It's certainly preferable to throwing it out.

No. Or rather, define "much effect." Look at the kinds of fruits in
the freezer case at your supermarket -- those will be the ones that
suffer the least damage, although commercial flash-freezing is
different from most home methods. The flavor may be good, but the
texture changes to different degrees.

We divvy up a large can of pineapple into small freezer bags for use in our
Tropical Tuna salad and smoothies. I've found that when I've finely chopped the
defrosted chunks up for the tuna salad and it works just fine.

Tropical Tuna Salad
2 large cans of solid white albacore, gently broken into small chunks.
1 cup dried cranberries
1 cup chopped pineapple chunks (not fresh)
1 cup raw cashews, coarsly chopped
6 oz baby spinach
1 cup Cardini's Caesar Salad Dressing
1/4 cup Lemon juice, more or less to individual taste
Sea Salt or Vegie Sal to taste

Combine tuna, cranberries, pineapple and cashews in large mixing bowl.

Place spinach, salad dressing and lemon juice in food processor (or process in
batches in a blender) and puree. Add to tuna mixture and mix well. Add salt to
taste. Add additional lemon juice if desired.
You can also add additional mayonnaise if you like a smoother, creamier
texture.

Makes a great sandwich on whole grain bread or serve on a bed of greens with
crackers.

Mmmmm! That sounds delicious! Where do you get dried cranberries?

blend it into something else when I thaw it out.

A natural food store, but most supermarkets do sell them as well in their dried
fruits section. Try to avoid ones with preservatives.

Trader Joe's sells frozen pineapple chunks. They're fine for most stuff.
