I racked a batch of orange wine two days ago and now I notice there are
littlespots of white mold floating on the top. Is this something I should be concerned about. I'm wondering if it is starting to spoil. It smells ok. Can someone tell me? Thanks, Bill -- http://home.earthlink.net/~billbernice1/ |

The white spots are probably a film yeast. It needs oxygen to grow, so reduce the amount of head space and you should be OK. lum |

Hi: You should skim it off and float some bisulfite on the surface. Also,
I found that pouring a little bit of hi proof alcohol keeps the mold from forming again.
