Default Coconut Cucumber Salad Recipe

Possibly one of the best salads you will taste.

1 lb. of cucumber
1 cup of plain low fat yogurt
1/4 cup of grated coconut (preferably a young fresh coconut)
1/2 tsp. of salt
1/2 tsp. of black pepper

1. Combine grated coconut and yogurt and refrigerate for 1/2 hour.

2. Peel and cut cucumbers (cut in bite-size pieces).

3. Add salt, black pepper and yogurt dressing to cucumbers and mix thoroughly.

I tried it yesterday. I think I didn't get it exactly on the spot, but it still was very very good.
The blend of coconot and cucumber is kind of refreshing, really different.

I showed this to my wife and she loved the style..though i'm non veg..I love the preparation. But the thing is, she used less salt and high fat yogurt. But it seems we get the same stuff. I really loved it.

Letís look at one more interesting recipe of cucumber salad that you can easily make at home.

Chop a cucumber with the skin and mix it with freshly grated coconut. Deseed the green chili, finely chop and add it to the coconut, cucumber mixture. Sprinkle with salt.

For the tempering Ė heat oil in a little pan and add the mustard seeds. When it starts to boil, add the curry leaves. Turn off the heat and pour it over the salad.

You can find some delicious healthy food recipes if you hunt online and even check out some companies selling ready-made healthy foods that are actually natural like sheffafoods - these are sure to be a delight for children as well as for the entire family.
