Default Sourdough Loaf (Second Attempt)

My first attempt at making a sourdough loaf was much less than
desireable, in fact, a fiasco. I decided to 'improve' the
recipe based on my knowledge of general baking. I would appreciate
any criticism regarding my new recipe.

1 cup starter, 2/3 cups water, 1 cup unbleached all purpose flour.
Mix and proof for about 12 hours or until bubbling. Add 1 tblsp
salt, 2 tblsp olive oil, and enough fresh milled wheat to make
a kneadable dough. Put in clean bowl and let rise 3-6 hours.
Shape a loaf or two baguettes on put on a baking sheet. Let rise
2 to 4 hours or until doubled. Bake @ 400 degrees 25-30 minutes.

This bread turned out very well IMO, however I am not a sourdough
expert by any means. Thanks for your time.
