Thumbs up Taro cakes

Taro cakes
Cha Khoai Mon


Ingredients
300g taro root
1 white sweet potato
4 medium sized potatoes
1/2 cup coriander leaves, chopped
4 spring onions, chopped
1/3 cup fried shallots
1/2 tsp salt
1/4 tsp cracked black pepper
Flour for dusting
Method
Bring water to the boil in the bottom of a steamer. Meanwhile peel the taro and potatoes and cut them into chunks. Place the vegetables on a steaming tray and cook until a knife easily passes through the flesh.
Pass the cooked vegetables through a sieve or food mill and combine with the coriander spring onion ,fried shallots salt and pepper.
Using damp fingers form the mixture into thick croquettes.
Lightly dust in flour and fry in hot oil until golden brown.
