Panocha walnuts
1 cup dark brown sugar 1/2 cup granulated sugar 1/2 cup cold water 1/4 tsp salt 1 tsp vanilla extract 2-1/2 cups shelled walnut halves In a 3-quart sauce pan, combine dark brown sugar, granulated sugar, cold water and salt. Over medium heat, slowly bring to a boil, stirring occasionally until sugar dissolves. Boil slowly until sugar mixture reaches 246-degrees F. (firm-ball stage). Remove from heat. Stir in vanilla and walnut halves. Continue stirring until nuts are coated and sugary. Quickly spread mixture on aluminum foil, parchment paper or waxed paper and separate nuts with two forks.
