Watson Estate Banana Waffles

purchased from the Watson Estate in McKinney, Texas

Dated 1931. Notation on card said this was served every Sunday (with
variations) for over 30 years in Grandpa Jack.s house. I have made these
recipes with all variations (to follow) and there is not a bad one in the
bunch. My favorite my far is the Bacon Waffles. Yummy.

2 eggs, separated
2 cups milk
1/3 cup melted shortening
2 cups flour
3 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
2/3 cup thinly sliced bananas

Beat the egg yolks until thickened. Add milk and shortening. Beat egg
whites until stiff and set aside. Sift the dry ingredients together and
add to the yolk mixture. Fold the beaten egg whites into this mixture and
gently stir in bananas. Pour batter into a hot waffle iron and bake for 3
minutes.
