Default Menudo

4 Lbs. tripe fresh corn tortillas
2 pigs feet split
1 fresh lime
5 cloves garlic
1 small onion chopped
8 cups water
5 bay leaves
small bunch cilantro
3 ozs. chili powder
2 cans garbanzo beans
1 1/2 tablespoons oregano
salt to taste
pepper to taste
1 tablespoon cumin


Cut tripe into small pieces.Combine tripe, pigs feet,onions, garlic &
water in a large pot. Cover & bring to a boil. Reduce heat to low and cook
for three hours. Remove feet and cut up meat & skin and return to pot.Add
remaining ingredient except tortillas & simmer one hour longer. Discard
bay leaves.

Note: traditionally calf feet are used but pigs feet are more available.
